Lasagna With a Tex-Mex Twist

I think the sour cream and green onions on the top of this dish is what my wife loves most about it. My daughter said its her second favorite dish she's ever ate (she loves regular lasagna, that's her number one.) I've seen my wife eat the leftovers the next day for lunch and dinner over freshly prepared food. Artichoke, Spinach, and Mushroom Lasagna

This is adapted from an epicurious recipe. It is an excellent choice for a dinner party, especially if some of your guests are vegetarians. It is very rich.I recommend Barilla "no boiling required" lasagna for this recipe, prepared using the Cook's Illustrated soak method. -- posted by xtine
