Raspberry-Cream Cheese Muffins

Serve these muffins for breakfast and your family will be begging for more. We love the combination of cream cheese and tart raspberries. GOOD TO KNOW: These sweets have only two-thirds the fat of traditional muffins. Walnuts are full of heart-healthy fats, and the antioxidants in raspberries can prevent heart disease and certain cancers, as well as keep your eyes, mind, and immune system sharp. -- posted by ElizabethKnicely

Grilled Eggplant Stacks With Goat Cheese, Tomato and Basil Sauce

A great summertime dish, this is an incredibly delicious recipe. I like to serve these eggplant stacks with grilled steak or chicken but these tasty stacks are good enough all on their own.The combination of the basil oil drizzled on the layers of eggplant with the goat cheese and tomato work so well together. You can't go wrong if you want to use feta instead of the goat cheese, I made a few with each and they are both equally delicious. If you are entertaining, these are a perfect choice to make ahead of time and than bake when you are ready to serve and they make a beautiful presentation! -- posted by Everything Tasty Kitchen

Crispy Rice Cheese Snacks

I found this handwritten recipe in my late mother-in-law's personal cookbook. I feel a connection with her when I cook a recipe that she has collected along the way. -- posted by Miss Fannie

Tomato, Basil and Eggplant Flatbread With Blue Cheese

From Seasons 52 restaurant in Atlanta. Chef Clifford Pleau, director of culinary development for Seasons 52 restaurants, was kind enough to develop a home version of this popular item. He said, "Actually, this recipe is pretty close to the recipe we use at Seasons 52. Ours has even less yeast, because we like it thin and flat, and we use a crisping agent because of the volume we use." The home version may bubble a bit on the pizza stone, but that only adds to its charm. -- posted by gailanng
